Bone Broth, Garden Fun...

We are being blessed with beautiful weather!! The past days have been picture perfect with true blue skies and perfect temps!!


It seems a bit unfair as Florida get pounded today with hurricane Matthew but I guess they are soaking up lovely weather down there during the winters while we grind out snow storms and just simply cold stuff here. Praying for those affected by this monster storm is still a priority today!

Bone Broth.... It has become a staple in my kitchen for some time now. First locating 100% organic chicken is a must. This can be a challenge but if you ask around enough some will become available somewhere.

I use warmers for this... About ten pounds of organic chicken went into each warmer with organic veggies... Carrots, Onions, Celery and Garlic....



It was on a simmer for two full days on the basement porch... Today in got strained and went into jars. It gets a hot water bath for an hour then it goes on the canning shelves.

This goes into lots of things that get made in the kitchen!! Simmering veggies, putting it into rice or pasta adds tons of nutrition! Soups are super easy to make when using bone broth and the flavor is so much better then the store bought broths!!

It gets jelly like once cold... When heated it melts right up again...:)


Some things like this that I do now would have seemed so complicated back in my younger days but once you make them lifestyle its really not complicated at all!...:) Eating healthy take effort no matter how you look at it but it is worth it for us so far!

This morning Dave had a checkup X-ray for his foot. He still limps and he seems frustrated about the pain that he still deals with! He was trying to tell the Doctor that he thinks something else is going on in there but the Doc looked at the X-ray with confidence and said "nope it just takes time!" He seemed to be like "Hello!! Your foot is broken here!!"

Dave asked him about when he can run again and when I saw this quote I thought it fit him well...;)


Dave so enjoyed his trip to Memphis! He had a great group of investors on a field trip there for a few days. They toured the market and some of the units that are on the ground there. They had time for meals and question and answer sessions. They met up with the property management team and Dave is proud to be a part of a great quality team there in Memphis!

My garden is thriving still!!! I will miss this so very much when the frost come to freeze us out!!!

Fresh juicy raspberries!!


We are still enjoying fresh salads from the garden!! I think I soak it up more this time of year because I know it won't last to much longer.

Tonight Dave and I are taking Mark and Jordan to the Laser Dome for some fun! Jordan earned a privilege and when the Little's got off the bus with Derik and Tash today to spend the evening with them we thought it would be a great opportunity to get this done!...:)

Justin was out of town for work the past two days but he looks forward to seeing Eva Jane tonight! She comes to Lancaster from her work most Friday nights and she uses the guest room sometimes and spends Saturdays with us.... Mostly Justin...:) but we like having her around... I told Justin I will put her to work if they lazy around so he quickly planned some jobs for them to do tomorrow...:)  Dave don't deal with lazy big boys in the house to well...:)

Tomorrow is supposed to be cold and rainy and I think it will be the perfect day to make the first pumpkin pies for the season... Baking has become rare here but pumpkin pies are a must at least a few times during pumpkin season!!
