A thing or two about our Monday's here... I wanted to share because I know this stage of our lives is moving so quickly and I will not always need to do so much food prep..
Spring is here... This green river bank along the road was the evidence to prove it this morning...:) The birds are also louder and the air feels and smells different these days...
Here are some things I love about Monday's...
Grocery shopping... It's something I enjoy...:)
My kitchen after my grocery run then feels and smells just like a restaurant...
Here is where I create as much as I'd like for a few afternoon hours...:)
Justin is back to healthy and loving it so I make him dishes and we kind of all enjoy them on Monday's because I always keep extra aside that's up for grabs... The kids walk in the door after school and say "Aw Yum!! What is that smell?" I let them eat it up and we call it supper...;)
Today was wild Caribbean rice with beans, chicken or wild caught fish for the meat, mushrooms in a mushroom sauce (this is so yummy!) snap peas, beans, broccoli, brussels and golden beets.
The musroom sauce went like this... Saute' sliced and seasoned (I use a herbed sea salt) mushrooms in coconut oil for 5-10 minutes and then add some of this soup...(pictured below) Thicken it up a bit until the texture is how you like. (I used melojel to thicken it today but corn starch or flour would work to)
(I use cast iron cookware for everything and I might be a bit bias but I think it adds tons of pop to the flavor!)
Wild caught cod fish with an olive oil drizzle, seafood seasoning and broiled just until flaky...
Today I added these golden beets to a few of Justin's dishes... I'm not sure if he will like them but he has created a taste for greens and these golden beets have a great flavor!
Justin eats about three of these dishes per day...
I cannot remember when the boys started to enjoy vegetables so much but introducing them into everything I created seemed to have paid off... They didn't always eat these veggies at first. Sometimes they picked out only what they knew they liked... Now Justin eats every bite and he asks for the healthy! I'm still waiting for the two youngest kiddos to eat as many veggies as the two oldest...:)
Its Mondays that I shred up cheeses for the week. (we love our fresh farmer cheese blocks!)

We added honey comb to our Israel honey bowl and its so enjoyable as it sets here on the counter!
Sometimes I get into trouble being a foodie... This cinnamon bread is not something I buy often but this week I just went ahead and added it in...its so GOOD!!
I rarely add a drink to the lunches but this week I will...:)
Since our Israel days we have had Hummus in the fridge here at home...:) It goes great with fresh salsa on almost anything... Dave says as long as its not as the "main course" its good!
(in Israel Hummas is often right up there with the main course to replace meat...:})
This cream is not something we always have around either but this week we will add it in ...:)
Mondays are mostly geared around food but then I don't need to think about it so much the rest of the week. It makes things so much more manageable when I take this day to clean up leftovers, clean out the fridge and restock and prep all on a Monday. I have come to depend on this prep day and if for some reason I'm out doing other things on my Monday the whole week feels off...:) Anybody else get it?

Javon's March book report project is being worked on... He still has some work to do on it but its in the making.
This month he needs to read a book and then create his own cearel box themed from his book... He is reading "Charlolet's Web" and his cearel is called "Piggy Pebbles"...:)
(the marble chase game just stays in the center of the table along with the decoration because it gets played with more this way...))
Dave travels some again this week. A few different states to do some "ATM Due Diligence".
Later this week Dave and Jordan spend a few days in Mississippi.
Jordan goes for another drivers test this week.(keeping fingers crossed!) We are so ready for him to have his drivers license!
Jenika is deep into soccer practice and her first game is later in this week. She loves soccer and it has been so good for her!
Justin is learning tons this last while as he adjusts to his new job on the road in his shed hauling truck! I met him on the road this morning and his load looked huge!
I hope to get outside and plant the first garden seeds later this week.. I trimmed up the grape arbor and it feels like things are about to burst to life outside!!
We are so THANKFUL to be on this side of WINTER!!
