Kitchen Fun...!

Last evening after the chiropractor we made a stop at Wegman's to stock up on fruits and vegetables. I got some sauces that looked interesting to. As I was getting the items I had an idea what I wanted to make with each thing, but till I get it home and put it in the fridge it sometimes ends up on the back shelf and I forget what I was going to make... especially when I stock up to much.

We also got some interesting stuff to juice to!.. Kale, beets, carrots, spinach, avocado, kiwi, pineapple and more stuff we want to blend and juice... The options are endless...:)

After running Jordan's blood work to FedEx this morning and having gotten the cleaning done. (thanks Rachel Ann) I decided to spend the rest of the day in the kitchen creating dishes and stuff while my food is still fresh then I'll just freeze everything for lunches. That way the stuff won't have a chance to go bad...:)

I started out with a yummy Asian style dish...
I had this yummy rice as the base... The chicken got stir fried in olive oil then the veggies to after that I dumped in this yummy simmer sauce and put it all on top of the rice and sprinkled with cheese. I got six nice size lunch dishes out of this dish...:)

Then I move on to the next dish...
This one was also Asian, I had Lo Mein noodles as the base then stir fried veggies, shrimp (which I steamed and peeled) and chicken. This vegetable stock gave the noodles a great flavor. I layered noodles, veggies and meat, sauce and cheese. I got six nice size lunch dishes out of this dish to...:)

I love sauces and I love to try different ones and kinda mix em up:) Anything is good with sauce and cheese right??


Next was the pita pizzas...


This one was fun... Six whole wheat pita halves, Toasted in oven a few minutes.
2 cups onion chopped, 4oz. mushroom blend, 1Tbsp olive oil salt and pepper.
Toss onion and mushroom in olive oil and spread on a cookie sheet roast in oven 350 18 minutes.

Puree 1 cup roasted peppers or tomatoes in blender with 1/2 Tbsp fresh oregano, 4 Tbsp fresh basil, until smooth.

Season 1/2 pint cherry tomatoes in salt and pepper, toss with a bit of olive oil. roast in oven beside mushroom mixture 8 minutes till tomatoes crack. Remove from oven Add 5oz baby spinach and roast again only 2 minutes.

spread pitas with purred mixture then the mushrooms and onions, sprinkle with cheese (I used homemade cheddar) top with the spinach and tomatoes. A yummy unique pizza...:)
These will go in the freezer for lunches as well...
 
Moving on to Bruschetta-stuffed portabellas...
Drizzle with olive oil (brush in) season with sea salt and fresh pepper. Bake 15-20 minutes. Stuff with Bruchetta topping (I picked up at Wegmans) and shredded cheese, bake again till cheese melts...:) So yummy! These will not make it to the freezer. Dave snatched one and Justin the other. Maybe I'll have one for the freezer??

I had like 20 individual dishes till it was all said and done. They are going to come in handy for the next week or so? I had them all lined up on the counter and I thought I had a picture of the finished product but I remember now that Jenika was in a hurry to help me get the lids on so I did not get that last picture before the boys took these to the freezer for me...:)

Maybe now that it's snowing so lovely and I worked today I can now get to the easy chair with my cup of hot chocolate tomorrow or over the week end~?...:) I have been talking about this since summer and it still has not happened!...:) I can always find something to do with my time...:)

 Justin has a quiz planned in Lititz tomorrow and I plan to go,  I'm not sure about this snow?? It might be delayed if the roads are to bad at 8 o'clock tomorrow morning. I look forward to watching the first quiz tomorrow!

I took Justin shopping for team shirts the other day so they are all set now with matching team shirts... He is getting excited to get into the competitive part of quizzing, this is the fun part of the whole thing!!:) He is off to skate on Amy's pond this evening with friends. Might as well take advantage of the ice while it's here we never know how long it will last! Last year we did not get this chance because it was a warmer winter. Justin is trying to squeeze into his ice skates but since not getting into them last winter he has out grew them after only a few uses!
