Recipes + Support Group

I have a few favorite recipes I have been wanting to share on here. I have lately become a Pinterest fan. I had an account set up for years but never got into it. Time was the issue but lately I have learned how to use it and it has been so helpful on the food journey we are on. So far I only have a food board since I haven't taken time to get into the other fun looking stuff on there! Warning! It is time consuming!

This Hot Sauce is a huge hit here!! I make it about every other week and it goes on pretty much everything we eat...:)

"Hot Sauce"

Into the "Vita mix" goes three red peppers, six-eight cloves garlic, two-three hot peppers. I use harbanero. Some seeds (depending how hot you like it) 1/2 cut white vinegar, 1 1/2 cups water, 1/4 cup sucanat, a dash of stevia extract powder, 1 tsp. salt. blend it together then pour into a sauce pan. mix 2-4 Tbls. corn starch or any thickener with 1/4 cup of water and add to sauce pan and heat until thick. Put into a squeezable bottle and keep in the refrigerator.

My boys love this stuff! They eat things they normally would not even have tasted since they can douse it with hot sauce...:)

I also started something different for Dave's breakfast. For years he had granola. He called it "Horse feed"! I made my own sometimes or got it at Millers. He was so sick of this stuff but I wasn't sure what else to send him. I took his breakfast some mornings but this is not an everyday option so I went to Pinterest again in search of a healthy yet handy breakfast.

I found muffin tin egg thingy's...:)

I made sausage, bacon, mushrooms, onions, peppers with some greens that I had here then added some of this mixture of stuff to each muffin tin. I whipped up some eggs and coconut milk and filled the tins to the top. Baked for about ten or fifteen minutes. Added shredded cheese and let it melt. Cool them then put them into a container for the shop freezer! He loves it!! He gets a few out every morning and throws them into his office crock pot so they are nice and hot when he is ready for breakfast. He thinks it's the best change made in 2015 so far..!..:)

Today Javon is at home with me. He is getting over a cold. He had a few nights last week where he was fighting for breath. He was so tight! I was glad for the nebulizer and oils. The breathing treatments always helped him breath better. He was bathing in oils. He was being slathered with them. They were being diffused. (still are) He is much better and we are so thankful! His slight cough and runny nose kept him home today but he is well on the mend and pretty much back to himself.
The rest of us never caught it yet... Thankful!! He is having a time of it this winter.

We had two hour school delays today because of black ice issues. Ladies Bible Study was again canceled. It opened up some time for us. We slept a bit longer and had a slower pace getting ready for school. Always a nice break on a dreary cold Monday morning...:) As I went to shut off the kids alarm clocks I had to smile as they were all snuggled in, the longer rest looked like such a blast...:) I only wished I was them for a few short moments...:) But once I entered the quiet kitchen and turned on the worship music I was glad I was up after all...:)


Remember Dave's bee stings?? We have taken a step towards what we hope will cure his allergy. We decided not to do the immunizations and go for the root of the problem which seemed to be his immune system. A saliva test was done and it showed a bad allergy problem along with a few other things that were not on goal.

We started him on some herbal tinctures and bee pollen. He drinks Kombucha Tea. His diet has changed a bit to help his immune system out. Sugar is a No. Challenging for this dessert loving guy but we are getting around it...:) I made these dark chocolate covered banana bites with a coconut sprinkle for the freezer. They were my type and very good. He on the other hand promptly sat beside me one evening after supper and sucked the chocolate off and spit the banana out. sigh...:) I will keep trying to get creative for him with sugar free desserts but he so likes the real deal so much I'm assuming nothing else will even be good enough...:)

I'm off to get Monday work done... The day started later then usual so it will most likely fly by.  Rachel Ann is taking some time off while I do some "Jenika Training" She had this mind set that "I not need to clean because Rachel Ann will get it on Friday" Not so good. I told Rachel Ann since it's winter and things are a bit slower that I want to take this opportunity to teach and train my eight year old the meaning of "cleaning". She was already scrubbing toilets and cleaning windows. She will like it, as will I once she gets the knack of it...;)

Support Group News...

Support Group starting up again on Wednesday if it works out. I will open my home every other week again for support group meet ups. These are great opportunities to hear from others that have food sensitivities and see what works for them. It's a great place to find creative ideas. How to shop smarter.I always come away refreshed and with some new great idea that is often great once applied!!

 I will serve Jordan friendly something and you are welcome to bring something to share to,along with the recipe. If you want to come you are definitely not obligated to bring anything!! Just show up to learn, educate and be a support to others going through a sometimes challenging food journey.

Ten O'clock at my house on Wednesday. Hope you can join us. Invite your friends. I will also have Black and Tan bean bread if anybody wants some. I plan to make something with this bread for snack to so you can taste it first...:)
