A Rainy Afternoon Post...

Perfect day for blogging but I still can't seem to get sitting behind this computer once... Javon and I took Dave lunch to the shop and stayed to enjoy it with him. We stopped at the library on the way home. My kids have always begged to go the library often and since we have one right near the shop we often stop there...:)

It was good to sit and read a bit longer this morning. Tuesdays are my normal run mornings but I did a four mile last evening so it freed me up this morning and I took more time for reading this morning...:) The rain made it easier to sit a bit longer to... I think the slower pace time of year is here and we are enjoying it.

The evenings are long and we read and play up until bedtime. Sometimes this seems long! The kids seem so rowdy and loud at times! Balls are flying and races are taking place around the "indoor track" At times I long to send them outdoors but then I remember it is now dark and cold,  I just keep telling myself this takes some getting used to... It's called ~WINTER~ We have a nice basement for this but for some reason it's so much more fun to them to play rowdy and loud right next to me, my cozy blanket and the book I'm reading...:)
Who wants quiet rather then kids having fun anyway?? I'll take my kids any day rather then quiet all the time but I do need to pray for patience more in the winter then on the summer days when they can run off energy outdoors.

We packaged up the burgers into food saver packs this morning, they are now ready for a permanent place in the freezer. Pumpkin pies are made for thanksgiving day. The turkey is ready for stuffing. Jordan's bedsheets got another wash. The basement got cleaned up and organized to. (maybe the kids will choose to play ball down there now??...:}) Seems like they never desire to play in the basement until it gets a good cleaning up??? I guess it is more fun to hangout down there when the clutter is gone.??  Can't say I blame them...:)

The laptop is reading his story to him...:) These "Bible Friends" books with CD are great! I had these memorized as a child and it's a great way to have the stories shared with the children! I did my share of reading the stories already to but this is so entertaining for Javon when I can't just sit and read long story after long story to him! Five books with four or five bible stories in each book. The ~ding~ tells him when to turn the page! The Little's spend hours with these right now.

It has been Indian and Pilgrim week for many of the school children!...:) Javon ate lunch in his pilgrim hat... Jenika got to go to a classmate's home for a Thanksgiving feast all dressed up like an Indian girl. The camera didn't make it out for that but she had a blast!

Today was school's "Thanksgiving" hot lunch day. The first that Jordan ever had to pack his own lunch on a hot lunch day. He normally looks forward to hot lunch days very much. He is doing amazing with eating totally "gluten free" though. We see a difference in him!!! He seems more energetic, less snotty, no more skin breakouts at all, less bloated, and just healthier looking all around. It will take a bit more time so we have dedicated two weeks of complete "gluten free" If he continues to do well we will try to make it "life style".

Thanksgiving lunch at my parents was Jordan's first test. He had to skip the bread filling. Mom had kept some turkey aside for him and we made some gluten free brownies for his dessert while the rest had cake and pie. He did great! Supper time came and mom started to heat up leftovers. Jordan ate an apple and some pudding but he had to say "no" to the goodies he normally loves so we soon left for home. It seems when he stays at home and on a schedule it won't be that bad but days like today and invitations out will be the test for us.

Tons of great recipes in here that are gluten free!  I had this book for a while now and read it and liked it yet never really put it to action. It came off the shelf after a friend told me about the "muffin in a mug" in here. Jordan and I taste tested the "muffin in a mug" last evening and it was yummy and fun to...:)

I taught him how to make his own and it can be tweaked in many different ways to mix up the variety. Microwave is still something we use a little to heavy here in our home. My goal is to wean us off of this thing eventually but for now this "muffin in a mug" requires it.
 THE RECIPE...
1 crack an egg into a coffee cup and whisk it well with a fork
2 Add 11/2 Tbs. golden flax meal
3 Add 1 1/2 Tbs. almond flour
4 Add 1 heaping Tbs. unsweet cocoa powder
5 Add 2-4 tsp. Truvia (I used the full four)... will take time for less...:)
6 Add 1/2 tsp. aluminum free baking powder
7 Add 1 flat Tbs. coconut oil
8 Stir vigorously (a mini workout for your right arm)
9 Microwave for 1 minute...
So cool! Can also add a Tbs. of heavy cream after the mini workout and it stays a bit more moist.
Delicious to me! I think this "gluten free" stuff will be good for me as well...:)

I did join Pinterest to, since every time I went online for "Gluten free" ideas it took me to this Pinterest site. I so far hate it though! Way to time consuming and overwhelming for me! I think I need to get some good followers and just let somebody else do all the research. I find it the same way as when I try to follow a recipe! I have found by now this is not my nature! I just like to dump stuff together and I think it turns out better this way anyway!!? So far Jordan's gluten free diet has been a style of my own. I just check all ingredients and I'm amazed how many things actually do have wheat or barley in them that I would normally use, but I found there are many things he can have to, so I choose to be grateful and work with it the best that I can.

Jordan's snacks were already mostly fruit so this part is really not that hard or out of the ordinary. It also makes it easier that out of all the kids, his love for food had him eating anything at all, even if it was something extremely healthy. He will try and like almost anything! He out of the four will be the easiest to work with. Pray for him though. This will be a battle. Pray for me to. I find it will be more work to be sure there are always things here that he can eat as an alternative to what the other children are eating!

My prayer is that he would soon be able to recognize and read his own body, to tell how it makes him feel. I hope he will realize the difference and then I think the whole process will go smoother this way! I am also glad he is older. It seems it would be much harder to explain this to a much younger child like Javon's age?

We are thankful and grateful that the journey to healthy foods started for us a long time ago. We are thankful that more foods in the grocery stores have become "gluten free" friendly. Jordan can have many of the same foods he enjoyed before,  we just have to learn to make them different and he needs to create a taste for the texture! Nothing like the white flour to make things fluffy and so yummy! We have gotten other flours and our journey to experimenting with these has begun. So far is has been fun and I think it will be a great experience for all of us as we seek to help Jordan on his "journey of hope" to better health!

If you know of a great website or other "gluten free" ideas I'd love to have them! I do want to make great tasting food for Jordan since he loves to eat yet I feel overwhelmed sometimes! I'm thankful for Internet though and the great ideas on there and for the research to! (Research shows me Jordan has Celiac Disease) Yet again I do not like to spend to much time behind a computer so maybe somebody out there has already done all this homework and if I could skip it this would be great...:}

Jordan has always been a great helper in the kitchen. Because he no longer can create the yummy foods he was used to I find he now comes to me more to ask "what can I eat"? Or "can I have this?" I want to teach him to create yummy foods in the kitchen with the foods he is allowed so I think I might need to find a recipe book just for him... He loves to follow a recipe and make good food...The book I pulled from the shelf last evening is a great start until I figure out Pinterest...;}

I have never seen such affectionate kids as my sister Kath's kids! They are so much fun to snuggle and they never fail to give lots and lots of hugs when we are together! They look into your eyes and give to most adorable smiles all the time! They melt my heart every time!! Love them!!

Enjoy the rainy afternoon... We are "Thankful" for a warm cozy house on this cold rainy day...!
