Winter continues to go on here....
We had a short peek over the week end of the brown earth that was hiding beneath the snow for the past weeks! We only had a short glimpse though because we got hit with another good dose of it this morning! Like 8-10 inches and it's still coming down so beautifully!!
The snow is more of a wet heavy snow so it's the great snowman making kind!.. :) It feels warmer here to then the past weeks! The temps are just near the freezing mark so this snow started as rain before the temps dropped today bringing us the lovely white stuff.
The kids have again been going in and out all morning. The no school day will drop our summer vacation back another day. We were happy to sleep a bit longer this morning though after a fun Superbowl party at Mike's last evening! The game was not that great to watch but the fellowship was worth the late night out! Thanks Mike's for opening up your home for this fun night!
I guess it has been a few days since I have last posted. We have been busy and as winter is continuing to give us cold and snow we are doing more housebound type stuff. The warmer week end had the kids out a bit more and I kind of forgot how it is to send them out for longer periods of time with less bundling up... It gave me a bit of spring fever... 45 more days until spring!!
The guys went to the Sportsman show in Harrisburg on Saturday leaving Jenika and I for a girls day! She was delighted and I don't know how often she said "Mom, this girls day is so much fun!" She asked if the boys will do "Sports Show" again next year? She is already looking forward to it! I guess she really has very few days where it's just her and I and she was loving it! She played very nicely all by herself at times and then she came to me to do something with her at time to. She got to go with me to visit Mummy Beiler at Dads. She helped mom put icing on a fresh batch of cookies!! Yes she put on way to much!! I said YES to her for a soft pretzel when leaving Dutch Way after stopping there for a few things!! We had a fun relaxing time at the Library together. We made a dessert to take to Mike's and also some "pretzel bark" her favorite!!
Pretzel Bark...
Lay a bag of pretzels on a foil covered bar pan (I used two of them) then boil a cup of butter with a cup of brown sugar (rolling boil for three minutes) dump on top of pretzels. Bake for five minutes in the preheated (375') oven, then dump on two cups of choc chips. Let the choc chips melt a bit before spreading them around with a knife. Pour some course sea salt on top of the choc chips for a more salty taste. Cool it, then break apart... Try not to eat the whole thing as it can be very addicting and this is so not a good thing!! We took this along to Mike's as well and it was of course a hit...:}
We went to share our Belize trip experience with some friends Saturday evening. It was fun to be at Willie and Mima sharing our trip with them. The best way for us to share our Belize trip with others is to be at a computer going through this blog...:)
We had church service yesterday and it was great to be a part of it as we heard testimony of a miracle God worked in a sister of a church member. G.I.D sister needed a kidney transplant real bad, some friends were gathering for an awareness meeting on this and a woman that was babysitting for a family that went to the meeting, she had only heard bits and pieces about her needing a kidney and didn't know GID's sister at all. That night she hardly got any sleep as God was working on her to donate her kidney!! She told her husband the next morning through tears that she must find out if she is a match!! She went to do the proper testing and not only did she match for the kidney but the blood type matched to! The match was perfect!! They set up a surgery date and the donor and GID's sister went into surgery! They are both doing amazingly well and this donor has sacrificed a kidney to someone so badly in need!! It was a total God thing and the two are now like family!!
Amy Fisher had a message then we had fellowship lunch in the basement after the service. I had forgotten about this fellowship lunch so we were not sure how to do with staying if Jordan could not eat anything...? The menu was an "Amish church dinner" with yummy soup. There was nothing that Jordan could have but do we all just leave?? I thought we should leave but Dave thought we could quick grab something to eat first.
The other kids wanted to eat and Justin had already went to eat with his friends, Jordan waited in the van for a bit. The fellowship here is always great to so we were not getting out of there as quick as we thought we would. Jordan was not impressed that he had to watch Jenika finish her soup and dessert on the way home.
We had lunch prepared for him already so as soon as we got home he heated that up. It was a treat not to have to feed the rest of the family but I still wonder if we were insensitive?? I find we will run into this kind of thing from time to time. He realizes that others can eat food that he can't have so he will need to learn to be strong and then stronger still at times like these.
He also wasn't sure if he wanted to go to Mike's for the Superbowl party!?? He kept telling me he is staying home!! I made the dessert for the party so he knew what was coming, watching everyone else eat the yummy dessert that he can't touch makes things harder for him! He seemed to be struggling worse the past days then the whole three weeks prier to this? I found him in the fridge and pantry more, just looking around when it was not meal time. He really cannot snack on anything so I asked him what he thinks he will find in there?? He didn't know but I could tell he was antsy and wanted to snack! I'm sure I would be the same way!!
For the Sportsman Show on Saturday we had packed him a yummy lunch. Dave said they would find a place to heat it up there. The show was crazy and people were everywhere! The booth Dave had set up there with "Zook Cabin's" was really busy so he stepped in to help out there. Jordan watched Justin eat a burger, Mark was along and he got a soft pretzel. This was hard for Jordan! He went on a few bites of oatmeal that he had for breakfast all day until he got home around five o'clock to heat up his dish! I told him I would have eatin it cold but he didn't think so!!
He lost three more pounds over the last week. That makes eleven.
Yesterday as we were preparing his supper to take along to Mikes he found this card that I had laid on the counter for him. It had come in the mail Saturday so it was still unopened on the counter...He found it at the perfect moment... he still wasn't convinced that he was okay with going along to Mike's (after I told him I won't leave him home alone!) Here is the front of the card...

The yummy food I had last evening did not come without punishment...:} I dug out the Jillian DVD for a hard 45 minute workout in the attic this morning. It has been awhile for my workout DVDs. I would rather just run but I can tell this was what I needed so I think I'll continue this for awhile along with my runs...
This is my favorite workout DVD ever... It goes well with running...Running just goes much easier when I keep up with this DVD!
Dave and Justin do some "Insanity" DVD but I have not braved that one yet...:}
This was my late breakfast/lunch... I put down spinach, tomato, avocado then I put my egg mixture on top... Egg mixture... (mushroom, asparagus, wild rice, with an egg and one egg white, shredded white cheddar) I put "Marie Sharps Hot sauce" on top (I will so miss this sauce when its all gone! Need to go back to Belize I guess:)!)
I can eat healthy and workout but I love sweets to!!! I seriously need to work on this!!
Sometimes I have coffee or tea with fried banana mixture after breakfast... The kids gross out at my fried bananas but my sweet tooth gets the best of me to often so I make this some days... This goes great with coffee or tea while sitting at my nook table watching the blue birds (that have finally returned!) Yes it is Winter and I'm snowed in so this was me this morning but this don't happen near every day!!...:)
My Banana mixture... Grill a banana in a tiny bit of coconut oil, (I use the spray kind) cut the banana in pieces, flip once the one side is grilled a bit, (I use a sharp knife to better flip each piece) sprinkle with cinnamon and agave or stevia then add 1/4 cup heavy cream and let it cook a bit until it's like a syrup... So yummy!!
I know, I know no wonder I need to workout right!!?? ~sigh~
The kids are enjoying the hill for sledding... You can see them off in the distance... This was taken from my front door a bit ago... We LOVE snow days like this here today but "oh my" the days now need to be made up at school... The way the forecast is looking it's far from over!! More coming!!???
At this point BRING IT ON...:) We are SOOO BLESSED!!
