Update On Us...:)

Been wondering where I've been??...:) I started to get some phone textes. Are you feeling okay? How is your week going?? The Africa crew always wonders where I'm at if I wait to many days to post...;)

I have been trying to get my body back to feeling 100%. I can tell this week is better but still something that's not quite right. Yesterday was the first that I didn't collapse for a nap in the afternoon in about a week! I must have been fighting something and I was so tired everyday!!

Last evenings run felt better again and today I'm blogging and not napping so I guess we are headed in the right direction again...:)

The snow is melting and the weather is much warmer!! We have small rivers running down the roads from the snow melting off of the fields. We are happy to see more of our driveway again and the mess at the end of it is even almost all cleared up, for the first in months! The beautiful sunsets are now over just a bit more in direction and the time change has also taken affect. We are officially heading towards spring and it feels amazing coming from the winter we have had!!

The time change is always an adjustment but as long as I have the kids in bed by nine o'clock our mornings go well. Jenika has started a reader book in first grade, we no longer study words in the morning!! Whoo-Hoo!! Those words are great to get them reading and I realize how important it is to study them with the first grader but I'm always so happy when we don't need to study words anymore!! She is now reading short stories to me instead....:) This is time consuming to but we do it evenings and it's just more relaxing...:) Bible memory gets studied at her bedside as I tuck her in. First grade is hard but she loves it and is doing great with her school work.

Javon is learning all about safety at his school this week. He is practicing his address and phone number, even though he has been calling my cell phone from home when I'm on the road for pretty long now it's still great to go over all this safety stuff with them at this age. He learned the purpose of dialing 911 and what to do if you ever do need to call that emergency number. He learned the meaning off red lights/traffic signs to and because we talk about those a lot while driving on the road he seemed to have many off them down pat...:)

Justin has signed his registry papers to send in for high school this week. He is excited to go even though he won't admit it...:) He brought home his first algebra book this week in preparation for high school. I think he will have assigned homework and this will be something for him to get used to since he rarely has any homework! He is making some money on the side again. He was at the shop the past few afternoons working in the office with Jennifer. She puts him to work in her office. He is also learning to be videographer at Dave's Tuesday evening Real Estate meetings. He is growing up so fast and he is so smart! I tell him "you better watch out, if you get to much more education your dad will snatch you right out of high school and put you to work in his office since you will have more school education in the line of office work then he does!" Dave is loving his stage though and I often hear them talking longer then usual over the evening book reports...:) I think they will work together well in the future, they both have that "goal oriented, high D personality" "God help me to except this okay"...:) They are a BLAST!!...:)

Jordan is doing great! He is taking his gun for a walk almost every afternoon!! It has warmed up and he spends so much time outdoors! He loves to be in the kitchen everyday!! He is looking at new recipes he wants to try. He has some kind of cookies picked out that he wants to make today after school. They have all ingredients in them that he may have (which makes me think they will not be good!) But I told him he can try anyway. They call for coconut flour and I just have not had to much luck with this flour yet at all! It's amazing what he thinks tastes good to him these days!...:) He has a few more cleansing days left. He is so excited to soon expand his diet a bit more. Adding fruit and corn will be the first things on the list. It will be slow but we are hopeful his body will handle a bit more of a variety.

My mom wants cooking lessons...:) I told her I will send her Jordan for a few days and he will teach her all the tricks she needs to know about healthy cooking...:) Basically it's back to the basics. We use coconut oil and lots of it! We use olive oil to! No more butter at all! We buy lemons by the case! We use tons and tons of peppers and onions!! Jordan will grill up peppers and onions in coconut oil with a bit of salt and eat this as a dip with his rice chips! Veggies get grilled up with everything! Peas, broccoli, squash, cabbage, I try asparagus to since I love it but it always gets picked out...:} We buy lettuce by the bulk! Ten heads at a time! Meat gets grilled with only a bit of salt then gets added to the veggies. We mix up the veggies enough that it don't get boring but some days I cannot believe he is not tired of his dishes yet!


Today I had planned to take supper to Floyd and Wilma's family. Trevor is in the hospital and was hoping to come home today. They got news this morning that he will need to stay until Friday sometime! Wilma called and asked if I'm busy making her supper..?? I said no not yet.:)  She then went on to tell me that she plans to head up to Hershey this afternoon to be with Trevor but if the food is ready they will enjoy it up there.

 It worked out fine for me since Javon was in school, I just got supper cooked for them this afternoon... The meal plan site asked that we go light on desserts and Jordan has been eyeing up this yummy recipe in one of his cookbooks and it turned out yummy! I ate a small dish after my lunch... I love meringue and lemon together.. I will share the recipe with you but I'm hoping I don't need to recopy it... Can you see it from the picture?



It took only a few minutes to assemble but the cooling took a while longer.

I made a Jordan style chicken dish with a side salad also.

The chicken was boneless skinless, cut into small pieces, dipped in egg then in almond/rice flour then fried in coconut oil, each side about five minutes. After the chicken was done I let it drip on a towel then tossed it with some coconut oil/sauce. I then grilled "the works" in coconut oil... mushrooms, onions, peppers, peas, slaw mix, squash and added that to some cooked brown rice. Assembled the chicken on top of this rice mixture and sprinkled with cheddar cheese... Almost Jordan style but I tweaked a few things to make it better...:) Things just need sauce and cheese to make it better...:)

I see it started raining... I'm off to get the kiddo's at school. We are looking forward to an evening at home. Dave has been away the last two evenings and with trying to adjust to this time change and just simply being overly exhausted these days it seems we haven't seen much of each other... We are looking so forward to a date night out with our friends coming up this week-end!! We even have a limo lined up for this fun night out!! We have been talking about doing something like this for a long time now and we are so excited to finally have it planned!!


We are excited for SPRING!!
