Belize Today... Jordan's Health Here...



We love Saturdays here on the island! Dave is a tad less busy and we see more of him...:)

Today was another lovely, sunny beautiful day!

We said good-bye to Jonathan's family today and it already seems so quiet next door! The Little's are so sad that they can no longer run next door to have friends! Jenika had in her mind that because Mark Andrew and the school girls came later this must mean that they are the only ones leaving today... This meant that at least we still had uncle Jonathan's and Bryant and Marissa to hangout with! She looked so surprised and upset when she was told that they are all leaving together today!!

She already misses you tons Tina!!

 
Tonight we are already back to an early supper, games of sequence and earlier beds. We so enjoyed company here to hangout with but it will actually feel nice not to fight so hard to get us all together and in the house and then to bed at a reasonable hour...:) It was more like "vacation" when family was here!
 
Justin is getting antsy to get back to a productive routine... He has had a great winter here but he is the one of us that is now ready to get back to life at home where he can work, be with his friends and get back to driving practice...:) I enjoy him being present and with us so much and I will miss him when he goes out with friends again! Yesterday we sat on beach chairs side by side and just chatted life things for pretty long! He has goals and dreams and it was great to hear his heart! He naps way to much these days!..
 
 
We still have a few investor friends here on site. They are enjoying time here a lot. We see them some off and on and we meet up for a six thirty run mornings but then they are out and about for the rest of the day... Last night we so enjoyed a wonderful meal with these investors at Blue Water Grill! "Home of the best key lime pie in the world!"
 
 
 
We have a few more investor friends coming in next week and we are planning one more dinner out with them. The kids want to do a dinner out yet before we leave but it is fun to cook and eat right here from our cottage kitchen so we do not eat out much as a family.
 
We are looking forward to taking friends to church and the corn hole competition with us tomorrow. After last week I almost have nightmares so I think if I see any cloud I'll quickly head home so we not get rained on again!... That was a sight for sure!...:)
 
The grounds here... The sewer project is being covered up! The last of it is still going on at the very end of the driveway but they say by early next week they want to do a pressure test so this is excellent news for the project managers here at MBV!!
 
Today we had some electrical stuff being worked on so we lost power just as we were sitting down to breakfast! Jordan had just finished making the toast so we did get to enjoy breakfast but the dishes had to wait to be washed until I made supper! We went to the beach earlier then ever since it was hot and we had no power at the house. Dave was able to work from the beach wifi. We are glad to have our power, water and wifi back tonight! Yet we are happy with the progress here on site!

How is Jordan handling this culture?? I will share a bit on his health journey here...
 
Jordan is doing okay. I love the idea of him not being on such a strict diet. I love that I don't stress over his menu and his diet. I can't even begin to explain to you the freedom that I feel here with just letting him eat whatever we are eating including dessert! It reduces so much stress not to have to shop special, cook special, bake his special goodies and just constantly need to be creative! His school lunch!! I won't even go there...! It's just one more wonderful part of this wintertime Belize journey!
 
BUT.... It is starting to show up now seven weeks later... He caught his first cold in ages!! He has a belly bulge that bugs me. He is doing great with running almost everyday but I can tell it is time to get back to reality.
 
I'm sad to say this but I feel like Jordan will need to have a restricted diet once again. We have very few options here when it comes to GF flours, breads and more! I love the idea of "NO GMO's in Belize" "NO pesticides" either!! I think this is why I'm being so lenient with Jordan and his food. We eat no processed food here at our house in Belize and I buy lots of fruit, veggies and meat.
 
The bread is made and gotten fresh most everyday. The bacon is so real and so full of flavor! The refried beans get made every week in the slow cooker and served with every single meal here. We get fresh eggs every few days. The greens get ordered online from Ambergreens (green house next to the Great House right here on site) and delivered to our door a few times a week! They are so lush, fresh and healthy! We eat lots of salads and greens with every meal!
 
So why is this not good enough!? Why is Jordan fighting a cold and gaining weight?  I think it's just to soon to get back a normal diet. I think he likes our fresh sweet juice to good. He is drinking some sodas. He is eating dessert and loving it! He loves the food here and who could ever blame him because it is just so good! (everybody that visits comments on the AMAZING food!)
 
Even if it's good whole food Belize still has a high carb diet. Lot's of rice, beans, tortillas, fried chicken, fry jacks and very little greens! It really is hard to find even decent lettuce around here so I'm so thankful for Ambergreens! I have been enjoying this outdoor produce shopping every Tuesday morning... I have a few ladies from here at MBV that ride down to the docks with me and we shop produce early in the morning before it gets to the street vendors... It is such a great experience!
 
 I find avocados here sometimes but they are sneaky about it since it's illegal to bring produce over from Mexico... yet this is mostly the only place that I can find avocados so you have to know who and how to ask...:) If you ask loud they won't have any. If it doesn't look like you are buying anything else then they won't have any but if you wait until you are ready to pay and ask quietly as they are adding up your other stuff then they will come out with as many as you ask for...:) I'm learning and it's great to have found avocado again after going the first few weeks here without them!
 
 
So I'm watching Jordan like a halk right now. I'm trying to figure out if the food is harming him or if he is just having to much fun and to much of it? I'm trying to read his body and so far his skin has not broke open and his gut seems to be okay. He does his supplements faithfully in the morning but the rest of the day they get forgotten and this was a no-no at home! We did supplements with all three meals and even some in between. It's just harder to remember them here for some reason and it was his job to stay on top of it at home... Here if I'm not on him he is skipping them...:/
 
Is Jordan still Gluten, Dairy and Egg free?? No, not here in Belize! Will he be when we get back home?? Yes most likely, I have a goal to get another blood test done to determine what we are still dealing with. It will also be time for his annual CHOP appointment (concerning his immunotherepy) when we get home in March.
 
I'm already gearing and prepping myself for the transition into things when we get back! I will go into culture shock if I don't "ease" into things... but it will once again be a busy lifestyle trying to help him (and the rest of us) take another step toward a healthier lifestyle. We have soaked it up here so far... bread and all! But I'm still trying to figure out how much if any damage was or is being done!?...:)
 
We are tired and the day was long... Tomorrow is infusion day for Jordan. Thank you for praying for his health! We are feeling so BLESSED... Good Night From our family at..."Ambergris Caye Island, Belize"...
